Healthy Mac N Cheese and Living off the grid

I tried a new mac n cheese recipe yesterday, claiming to be very healthy, low fat, and delicious.
It came out perfectly, but it didn't taste cheesy at all. One of the main ingredients is pureed carrots. So, it totally looked orange, like mac n cheese should, but with none of the buttery richness. Maybe's it's because there was no butter in it. Oh well. At least I have some guilt-free pasta for the next few days.

Just got back from amazing Caye Caulker, Belize (my 2nd trip) after a week of craziness at work. It was a vacation i DEFINITELY needed! Here is a list of things I did:
  • Read a book
  • Got a tan
  • Snorkeled among sea turtles
  • Drank a lot of rum/beer
  • Got food poisoning
  • Watched several hours of Parental Control on MTV
  • Had rice and beans for every meal
  • Went cave tubing
  • slept close to 12 hours a night

On our cave tubing trip, we met a couple of Belgians who had just moved to Belize last year. They were relatively young (prob late 20s, early 30s), and they had come to open a dive shop, a 3 room guesthouse, and restaurant on Long Caye, a little island near the Blue Hole. It's at least 2 hours by boat from anywhere, there are no land lines, and only 4 people (including themselves) live on this island.

What?!?!

I thought it was so insane that they went from a bustling European region to a tiny island off the grid. Plus, high season in Belize is only about 4-5 months long, so for a big part of the year, they are practically alone. They seem to enjoy the peace and quiet so far, and the first 3 months were difficult without friends and family, but now they've settled in and have no regrets.

It's amazing to hear people who leave everything to open a fledging business in the middle of nowhere.
